Food on a Budget – This Weeks Meals

My meal plan is a mix of western and eastern influences, and the menu changes with the seasons. Be sure to ask about the monthly specials on groceries!


Snacks

Bananas
Bananas make a simple, tasty and nutritious snack. Easy to eat at home or on the go.
$2.69/kg (2019)

Prices updated for 2023:
Bananas $3.79

Banana and Chocolate Chip Muffins (1 dozen):
Add some oats to make these extra filling. 1 batch costs roughly $3 so 1 muffin (=serve) costs roughly 25c.

Chopped veges and hummus
Chop up some carrots and m.y.o. hummus for a delicious snack.
Carrots $1.19/kg = 10c per giant carrot. (2019)

1 can chickpeas = $1.49 (blend and add salt/pepper to taste. (2019)

Tahini (optional)= $6.49 for 300g. You only need a Tbsp or two so this jar should last up to 20 cans-worth of chickpeas. (2019)

Lunch/Dinner Ideas

Corn and roast veges:
Corn, onions, potatoes, and herbs.

Corn is less thatn $1 per cob in the summer-time. Eat it alongside other budget-friendly veges.

Fish Pie:

2 cans tuna fish = $2.60, 200ml soy milk + flour to make a rue. 2 mashable potatoes, 2 carrots, frozen peans 200g. Costs roughly $4 for 4 serves. $1/serve
2023 Prices: Tuna $1.60/can 95g.

Chicken Stir-Fry
Stir-fry chicken, add low-cost veges, eggs then add flavourings i.e. soy sauce. Serve with noodles or rice.
~$1.50 per serve.


Breakfast/Sweet Ideas

Porridge:

A breakfast staple, excellent for warming up in winter-time. Add cocoa to make chocolate porridge, or add fruit on top, with your choice of milk or cream. $2/kg oats

2023 Prices: $3.50/kg

Banana Pancakes
Pikelet-style pancakes with mashed banana added. Serve with whatever you please. I love mine served with peanut butter.
$1-$1.20/serve.


2023 Prices: Peanut butter – $2.90/375g

PBanana Smoothie

One large banana, one generous tablespoon of peanut butter, one 200ml box of soy milk.
$1/serve


2023 Prices: Soy milk – between $3 and $5 a litre.

Eggs on Toast:

Cook 2-3 eggs how you like them.

Toast toast.

Stirfry up some veges of your choice (imho mushrooms work best).
~$1 per serve
